Spiced Gingerbread Cheesecake

This little gingerbread house has some strong foundations: perched on a bed of spiced gingerbread cheesecake.

We start with a mixed spice crumble base and then add some silky white cheesecake. We do this in big 60 x 40cm slabs - ready for a city of gingerbread houses to follow.

The houses themselves are all handmade. The walls and roof sections are cut into gingerbread biscuits and then carefully assembled and decorated using various sweet building materials!

We wish we could build our bakeries like this...
