A bright cake with brighter ingredients, the primary flavours in this cake are mango and passionfruit.
We start with a sweet dough base, moving to a coconut daquoise.
A layer of lime mousse then gives way to a beautiful yellow glaze, which is then topped with playful coconut mousse decoration.
This cake is around 8 inches in diameter and served on a 9-inch cake board. It should serve around 8-10 people.
